BLACK GARLIC RECIPES

Cheese and Cracker Platter

Add Black Garlic slices or puree with your favorite cheeses and biscuits for a tasty addition to your nibbles.

Black Garlic Dip

1 Black Garlic Bulb

1/4 cup sour cream 

2 Tbsp olive oil

1 tbsp fresh minced shallots

8 oz cream cheese, softened

1/2 cup toasted walnuts, chopped

salt and pepper to taste

Directions:  Add peeled Black Garlic cloves to a food processor with sour cream and olive oil, process until smooth, add remaining ingredients, except walnuts. Process until mixture is smooth stopping to scrape down bowl as necessary, transfer to medium bowl and fold in walnuts cover and refrigerate for 24 hours to allow flavors to meld.

Serve with you favorite vegetable or crackers also great as a sandwich spread.

Black Garlic Tahini

12 ozs tahini paste

2-3 heads black garlic, pulp only

juice of half a lemon

1/2 cup curly parsley

1-1/2 teaspoons salt

1/2 teaspoon pepper

1-2 tablespoons water optional

Directions: Combine all ingredients in a food processor or blender. Blend until smooth, scraping down sides as needed. taste, and add more salt, pepper, water or lemon juice as desired. Adjust consistency of the tahini by adding more lemon juice or water to make a pourable consistency (this recipe yeilds a thick spred). Serve with grilled pita wedges, multi-grain crackers or a sauce for chicken or fish.

Black Garlic and Ricotta Pizza

1 12 inch pizza base

5 cloves black garlic thinly sliced

1/2 cup ricotta

1/3 cup shredded fresh mozzarella

1/4 cup heavy cream

1 shallot thinly sliced

1 1/2 tablespoons chopped fresh parsley

1 tablespoon chopped fresh tarragon

salt and freshly ground black pepper 

To top the pizza: brush the dough all over with olive oil, making sure to get all the way to the edges. sprinkle with salt and pepper then the shallots, and then half of the parsley and half the tarragon, scatter the black garlic evenly on top. Drop little dollops of ricotta all over the pizza, scatter on mozzarella, drizzle the cream over all.  Bake in oven for approx. 10 mins until cheese is melted and edges begin to brown. Remove from oven sprinkle remaining parsley and tarragon, salt and pepper to taste, cut and serve. 

Easy Chocolate and Black Garlic Ice Cream

20 cloves of black garlic thinly sliced

2 tablespoons coarsely chopped toasted almonds

2 litres chocolate or mocha almond fudge ice cream softened

strawberries, to garnish

whipped cream or cream fraiche to garnish

Stir the chopped black garlic and almonds into the ice cream and mix well. cover and freeze for a least 3 hours.

Serve topped with strawberries dollops of cream or cream fraiche
