ELEPHANT GARLIC
Commonly called Russian
garlic, is not a garlic but a close relative of the leek. Elephant Garlic has a mild sweet flavour somewhere between garlic and leek, cloves are large and easy to peel. They can be eaten raw sliced into salads or baked, cooked like onions in soups and stews.

Black Garlic
Black Garlic can be eaten everyday as a health booster without the fear of garlic breath.
Black Garlic is made with a Maillard reaction process of raw garlic using controlled stable and consistent temperature to ferment for a certain number of days.
Black Garlic is enjoyed best just as it is peeled straight from the bulb, or part of a cheese platter. It makes great sauces that lend rich flavour to soups and marinades. Slice or spread puree on bruschetta, crackers and cheese, pairs well with mushrooms, tomatoes, cheeses, pasta, pizza and meats.
From a nutritional point of view the main reason Black Garlic offers a lot of health benefits is that it is very rich in antioxidants. It may contains two times more antioxidants than raw garlic.
Black Garlic is also very rich in sulphurous compounds, one known as S-Allylcycteine (SAC) has been shown to offer a lot of health benefits including the inhabitation of cholesterol synthesis, in simpler terms it means that this particular compound has the ability to lower the risk of cardiovascular disease.
S-Allylcycteine is water soluble and readily digestible.
